That half bunch of wilted chard and those moldy beets that we of course purchased with the best of intentions, are adding up to $1,365 to $2,275 a year. Needless to say, that’s a significant amount of money down the drain and current food waste levels are causing surprising damage to our environment. But when our meals are planned with good recipes, we buy only what we need and know we’ll use. And when we look our farmer in the eye and he tells us he just picked that cabbage last night, we’ll all think twice about tossing anything in the trash.
